But the evolution of the local drinks scene over the last dozen years or so can be seen as both a microcosm of industry trends as well as a wholly distinct landscape. This is due in large part to a young population eager to rise within the industry, and the state’s notoriously strict liquor laws. “I think the restrictions can breed creativity in ways that a lot of people don’t have to think about in other markets,” says Scott Gardner, a longtime Salt Lake bartender and co-founder of @WaterWitchSLC, with Utah native and cocktail veteran @SeanNeves. For this year’s holiday issue, we looked to the cocktail of the moment, the Espresso Martini, for inspiration, inviting bartenders around the country to share their favorite coffee cocktails. This Abuela’s Revenge, featured on the cover, comes from @JudsonShermanRose of @BrokenShaker in @FreehandHotels Chicago. “This drink’s inspiration spawned from a bit of homesickness,” he says. “Thinking about my summers in New York City and cooling off with one of Serendipity’s famous frozen hot chocolates, I decided to riff off the concept but put an adult twist on it while spicing it up.” Essentially a frozen hot chocolate cocktail, the recipe pairs the flavors of mezcal and coffee liqueur with the sweet spice of Mexican hot chocolate and Ancho Reyes.
