Coconut rum and strawberry Aperol imbue the classic spritz with summer vibes.

For a summery twist on the Aperol Spritz, Steven Waters, owner and operator of FiNO in Denver, infuses Aperol with dehydrated strawberries and bolsters the sparkling aperitivo with coconut rum. “[Coconut rum] adds a refreshing tropical twist to that classic candied orange flavor and herbal bite,” says Waters.

Ingredients

  • 1 1/2 oz. strawberry Aperol
  • 1 oz. coconut rum
  • 1/2 tsp. saline solution
  • 3 oz. sparkling rosé
  • Tools:barspoon
  • Glass:wine
  • Garnish:olive and strawberry on a pick

Preparation

Build the cocktail directly in a wine glass over ice, then give it a gentle stir and add the garnish.
Strawberry AperolBlend 1/4 cup of dehydrated strawberries into 4 1/4 cups of Aperol. Let it sit overnight. Strain through a coffee filter.
Saline SolutionAdd 1 tsp. of salt to 2 cups of water and stir until salt is completely dissolved.
