This gin sour is bursting with veggie goodness.

This carrot cocktail from bartender Emma Buck captures the moment spring transitions to summer, when gardens are bursting with herbs and veggies. “The florals of the gin with the soft sweetness of carrots and a touch of bright citrus take me right back to those beautiful early summer mornings,” she says.

Ingredients

  • 1 1/2 oz. carrot sage gin
  • 1 1/4 oz. fresh carrot juice
  • 1/2 oz. Italicus
  • 1/2 oz. honey syrup
  • 1/2 oz. fresh lemon juice
  • 1 dash Fee foam
  • Tools:shaker, strainer, fine-mesh strainer
  • Glass:Nick & Nora
  • Garnish:carrot greens

Preparation

Add all of the ingredients to a shaker and fill with ice. Give the cocktail a hard whip shake for at least 30-45 seconds. Double strain into a chilled glass, and lightly float a carrot top leaf on the surface.
Carrot Sage GinAdd 1 3/4 Tbsp. of carrot greens, 5 oz. of juiced carrot pulp, and 2 Tbsp. of fresh sage to 500ml of your favorite gin. Add the ingredients to an airtight container and refrigerating for 24 hours. Strain through a coffee filter. Will keep for 2 to 3 weeks in the refrigerator.
