Byrrh lends extra depth to this Spanish G&T.

This riff on the Gin & Tonic—a Barcelona staple—leaves out the bubbles and adds Byrhh quinquina and bitters. Bobby Gin uses Modernessia Gin, a Spanish brand that Pizarro helped develop.


  • 1 3/4 oz. gin
  • 3/4 oz. tonic syrup (Bobby Gin uses Bon Vivant)
  • 3/4 oz. Byrrh Grand Quinquina
  • 2 drops orange bitters
  • Tools:barspoon, strainer
  • Glass:coupe
  • Garnish:orange twist


Stir all the ingredients with ice to chill, then strain into a chilled glass. Garnish.
