Rhubarb Paloma

An elevated take on a classic tequila cocktail.

At Current Charcoal Grill in Birmingham, Alabama, bar manager Kendall Salgado makes a classic tequila cocktail even more summery with the addition of a favorite seasonal ingredient. “It hits those strikingly familiar notes of a classic Paloma that people know and love, but it’s a bit brighter, crisper, and layered with light notes of rhubarb,” she says.

Ingredients

  • 1 1/2 oz. blanco tequila
  • 1 oz. rhubarb liqueur
  • 3/4 oz. fresh grapefruit juice
  • 1/2 oz. fresh lime juice
  • 4 drops of 20% saline solution
  • Sparkling water, to top
  • Tools:shaker, strainer
  • Glass:Collins
  • Garnish:mint sprig

Preparation

Add all of the ingredients, except the sparkling water, to a shaker with ice. Shake vigorously for about 10 seconds. Strain into a glass filled with ice and top with sparkling water.
20% Saline SolutionCombine 1 1/2 Tbsp. of salt and 1/3 cup of water and stir until salt is totally dissolved.
