Bijou Cocktail Riff

Opposites attract in this modern twist on the classic.

The idea for the Golden Ghost came from the classic Bijou cocktail, says Brian Evans of Sunday in Brooklyn. “With this drink, I wanted to pair flavors of bitterness, chocolate and smokiness. I’ve found that what might seem almost like opposites, all pleasantly attract.”

Ingredients

  • ¾ oz. mezcal espadín
  • ¾ oz. blanco tequila
  • ¾ oz. white crème de cacao
  • ¾ oz. génépy
  • 1 dash orange bitters
  • Tools:mixing glass, barspoon
  • Glass:Nick and Nora
  • Garnish:star anise

Preparation

Stir all the ingredients together with ice in mixing glass. Strain into a chilled glass, then garnish.

Note: At the bar, Evans soaks 1 star anise in overproof vodka, then lights it aflame over the drink before garnishing.
