For a richer, more rustic flavor, Seattle-based bartender Chris Elford advises against using an overly filtered IPA for this cocktail.


3/4 oz. blanco tequila
3/4 oz. fresh lime juice
3/4 oz. Campari
1/2 oz. Demerara syrup (1:1)
1 oz. chilled IPA
Tools: shaker, strainer, barspoon
Glass: rocks
Garnish: grapefruit peel


Combine all ingredients (except beer) in a shaker and fill with ice. Shake to chill, strain into an ice-filled glass. Add the IPA, stir to combine and garnish.
