An Old Fashioned-style cocktail with the comforting character of a cup of tea.

When coming up with an Old Fashioned-style cocktail for Realm of 52 Remedies’ “Teas of the World” 2021 menu, bartender Brian Prugalidad wanted to incorporate all his favorite ingredients. “Being Filipino American, I felt it was a perfect vehicle to inject a bit of my heritage into the glass,” he says. The warm, tropical flavor of a Filipino rum counterbalances a lightly peated scotch, and the blend is infused with Earl Grey tea. To emulate a cup of Earl Grey tea with milk, Prugalidad sweetens the cocktail with honey syrup and tops it with a layer of cinnamon cream. This comforting cocktail has been a crowd favorite ever since, earning a permanent spot on the menu.

Ingredients

  • Tools:mixing glass, barspoon
  • Glass:double rocks
  • Garnish:sprinkle with loose Earl Grey tea

Preparation

Add the ingredients, except the cinnamon cream, to a mixing glass and stir. Pour over a large rock in the glass. Layer cinnamon cream over the cocktail and sprinkle loose Earl Grey tea on top.
Earl Grey-Infused Scotch-Rum BlendCombine 4 Tbsp. of loose Earl Grey tea with 2 cups of scotch and 1 cup of rum (Realm uses Jura 10-year and Kasama 7-year Filipino rum) in a large, airtight container and agitate vigorously. Let sit for 1-2 hours, tasting after one hour. Tea flavor should be prominent but not overpowering. Fine strain and whisky is ready for use.

For a single serving, combine 1 1/2 oz. of scotch, 1/2 oz. of rum, and a tea bag of Earl Grey and allow to steep for at least 5 to 10 minutes, depending on ambient temperature.
Cinnamon CreamIn a 16 oz. squeeze bottle, combine 10 oz. of heavy cream and 2 oz. of cinnamon syrup. Shake until viscosity of the liquid is slightly thicker than the heavy cream. Will keep in the refrigerator for 7 days.
20% Saline SolutionCombine 1 1/2 Tbsp. of salt and 1/3 cup of water and stir until salt is totally dissolved.
