Bitter Pop: A Low-Proof Holiday Highball

A rich amaro meets vanilla and ginger ale in this simple holiday highball.


  • 1 1/2 oz. Amaro Sfumato Rabarbaro
  • 3/4 oz. vanilla syrup
  • 4 oz. ginger ale (such as Boylan)
  • Tools:barspoon
  • Glass:Collins
  • Garnish:orange slice, lightly torched on one side (optional)


Add the first 2 ingredients to a glass and top with ginger ale (to create an aromatic foam, pour the ginger ale from a few inches above the glass). Add ice, and garnish. (Optional: Using a kitchen torch, carefully sear the orange slice before using as garnish.)
