This low-proof highball from Ironside Fish & Oyster in San Diego combines easy-to-remember proportions.

3/4 oz. Aperol
3/4 oz. Cocchi Rosa
3/4 oz. elderflower liqueur
3/4 oz. fresh lemon juice
3-4 oz. club soda
Tools: shaker, strainer
Glass: highball
Garnish: lemon wheel

Combine the first 4 ingredients in a shaker with ice and shake to chill. Strain into an ice-filled glass, top with soda and garnish.
