With roots dating back to 19th-century New Orleans, the Blackthorn cocktail is one of the few classics to highlight Irish whiskey.
2 oz. Irish whiskey (Lazy Bird uses Knappogue 12 Year)
½ oz. dry vermouth
½ oz. sweet vermouth
2 dashes Angostura bitters
1 dash absinthe
Tools: barspoon, strainer
Garnish: lemon twist
Stir all ingredients with ice, then strain into a glass filled with fresh ice, and garnish.
