The oldest cantina in Tequila, Mexico, sells gallons of tequila courtesy of this classic highball.

La Capilla is the oldest cantina in the town of Tequila, Mexico, and pours countless gallons of the local spirit in this simple cocktail, Batanga, for which the bar is known around the world.

Ingredients

  • 2 oz. blanco tequila
  • 1/2 a medium lime (or 1 small lime)
  • Chilled cola
  • 1 pinch coarse salt
  • Tools:knife
  • Glass:Collins or pint
  • Garnish:salt rim

Preparation

Moisten the rim of a glass with the cut side of a lime wedge and dip the rim in coarse salt, shaking to remove the excess. Fill the glass with ice, and add the pinch of salt, tequila, and juice of 1/2 a lime. (If your limes are small, use the juice of a whole lime.) Top with chilled cola and briefly stir with the knife used to cut the lime.
