Originally on the menu at Dutch Kills, New York City bartender Meaghan Dorman fell in love with The Bicycle Thief cocktail during regular visits to Milk & Honey. The drink eventually became her staff pick for the “what we are drinking” section of the menu at Raines Law Room. “We love it and always make it for our Negroni Week specials,” Dorman says.
1 oz. Campari
1 oz. gin
½ oz. fresh lemon juice
1½ oz. fresh grapefruit juice
½ oz. simple syrup (1:1)
Tools: shaker, strainer
Garnish: grapefruit slice
In a mixing tin, combine the lemon juice, simple syrup, grapefruit juice, Campari and gin with ice and shake until chilled. Strain into a Collins glass over fresh ice and top with soda water before garnishing.
