Vodka Collins Riff

Rosemary syrup mixes seamlessly with the flavors of pine and pear in this seasonal Vodka Collins.

¾ oz. pear vodka (Grey Goose La Poire)
¾ oz. vodka
¾ oz. fresh lemon juice
½ oz. rosemary-honey syrup
½ oz. Douglas Fir liqueur
1½ oz. soda water
Tools: shaker, strainer
Glass: Collins
Garnish: fennel fronds

Add all the ingredients (except the soda) in a shaker with ice and shake to combine. Strain into a Collins glass over fresh ice. Top with soda. Stir briefly to combine. Garnish.

Rosemary-Honey Syrup: In saucepan, add 2 sprigs of rosemary to 4 oz. of water, then bring up the heat to a simmer. Let simmer for 10 minutes and remove from the heat. After 5 minutes, strain out the rosemary. Add 12 oz. of honey to the water and stir until combined. Refrigerate for up to 2 weeks.
