Sunset Vibes grapefruit vodka cocktail Chez Nick

Summer in a glass.

Chez Nick bartender Laura Garcia drew inspiration for this summery cocktail from the colors of the season. In Sunset Vibes, Aperol’s sweetness and mezcal’s subtle smokiness balance the bitterness of grapefruit juice and tonic.

Ingredients

1 1/2 oz. vodka
1 1/2 oz. fresh grapefruit juice
1/2 oz. Aperol
1/4 oz. mezcal
splash of tonic

Glass:highball
Garnish:dehydrated (or fresh) grapefruit slice

Preparation

Pour the first 3 ingredients into a glass, add ice, and stir until combined. Top with a splash of tonic water and a float of mezcal. Garnish.
