Sorrento Sun: A Mezcal Margarita

Mike Lay, beverage director of Charleston’s Sorelle, sweetens his Mezcal Margarita recipe with a carrot and passion fruit syrup. “The two flavors are great together,” he says. Meanwhile, a half-ounce of Luxardo Bianco adds a bit of complexity. 


  • 1 1/2 oz. mezcal
  • 1/2 oz. Luxardo Bitter Bianco
  • 1 oz. fresh lime juice
  • 3/4 oz. passion fruit and carrot syrup
  • ____________________________
  • Passion Fruit and Carrot Syrup
  • 3 1/2 oz. passion fruit purée
  • 1 1/2 oz. carrot juice
  • 5 oz. sugar
  • 5 oz. water
  • Tools:shaker, strainer, fine strainer
  • Glass:large rocks
  • Garnish:dehydrated blood orange wheel


Combine all of the ingredients in a shaker with ice and shake. Fine strain into a large rocks glass over ice. Garnish.

Passion Fruit and Carrot SyrupCombine the ingredients in a container and mix until sugar has dissolved. Will keep in the refrigerator for 2 weeks.
