Somewhere Over the Rainbow: A Halekulani Variation

For his variation on the Halekulani cocktail, a tropical classic revived by Shannon Mustipher in her book, Tiki: Modern Tropical Cocktails, Quintin Scalfaro, beverage director of Portland’s Love Shack, infuses the bourbon with hibiscus tea. This simple tweak gives the cocktail an astringency that balances the sweetness of the grenadine and fruit juices.

Ingredients

  • 1 1/2 oz. hibiscus-infused bourbon
  • 1/2 oz. fresh orange juice
  • 1/2 oz. fresh pineapple juice
  • 1/2 oz. fresh lemon juice
  • 1/2 oz. grenadine
  • 1 dash Angostura bitters
  • Tools:shaker, strainer
  • Glass:coupe
  • Garnish:dehydrated orange wheel

Preparation

Add all of the ingredients to a shaker with ice. Shake to chill and strain into the glass. Garnish.
Hibiscus-Infused BourbonAdd 3 bags of hibiscus tea to a 750ml bottle of bourbon. Let infuse for 2 hours. Remove the teabags from the whiskey, bottle, and enjoy.
