Seaworthy’s Goldfinch

At Seaworthy in New Orleans, bartender Lauren Schell (who also runs the drinks program at Grand Banks) combines two low-ABV ingredients—Cocchi Americano and fino sherry—for one supremely refreshing highball.

1 oz. Cocchi Americano
1 oz. fino sherry
¾ oz. fresh lemon juice
½ oz. simple syrup (1:1)
2 dashes orange bitters
Tools: shaker, strainer
Glass: collins
Garnish: grapefruit peel

Shake all the ingredients with a single ice cube. Strain over fresh ice into a chilled glass. Top with club soda and garnish.
