Foreign Affair Bar Iris

An umami-laced rum cocktail.

The Foreign Affair cocktail from San Francisco’s Japanese-inspired Bar Iris, will make your mouth water with its mix of plum sake, Manzanilla sherry, aperitivo, and aged rum.

Ingredients

  • 1 oz. aged rum
  • ¾ oz. bitter red liqueur (Romanov uses Select Aperitivo or Aperol)
  • ¾ oz. manzanilla sherry
  • ½ oz. plum sake (Romanov uses Kagatsuru Plum Sake but says you can use umeshu)
  • Tools:mixing glass, strainer, paring knife
  • Glass:cocktail or pony
  • Garnish:lemon peel

Preparation

Pour all of the ingredients into a mixing glass. Add ice and stir for 10-14 seconds, allowing the cocktail to properly dilute. Strain into a cocktail or pony glass. With a paring knife, straight cut a medallion-sized lemon peel. Express and use as a garnish or discard.
