Drink of the Week: Copalli Rum

In this year’s Imbibe 75 issue, we highlight how rhum agricole and cachaça have opened the door for other global spirits made with fresh-pressed sugarcane to arrive stateside, including an expression from Belize called Copalli. The distillery makes two varieties: a barrel-aged rum and a white rum. The latter is a single-estate expression made from heirloom sugarcane grown in the heart of the rainforest. The finished product is a blend of two distillates—one double distilled via pot still and one via column still, which creates a perfect balance of texture and flavor. With bright cane and pineapple notes, the rum’s personality is accented with dry cinnamon and lemon peel, making it a great fit for a classic Daiquiri or one of these rhum-based cocktails. $28.99, klwines.com
