Gary Wallach, partner of Lindens NYC, infuses vodka with one of his favorite herbs, sage, for this wintry take on the Gibson cocktail. “I wanted to craft a cocktail that was an ode to the enduring harvest of the colder months,” he said.
Add all of the ingredients to a mixing glass with ice and stir to chill. Add the onion and sage to a chilled glass. Pour the cocktail into the glass.
Sage-Infused VodkaAllow fresh sage (roughly 1 leafy sprig per 8 oz) to steep and infuse vodka for 3 days.
