How a Jalisco bar freshens up this classic tequila highball.

In tequila’s Jalisco hometown, Palomas are a preferred way of enjoying the local spirit. Bartenders at Ixtete—a bar, tasting room, and bottle shop in Tequila’s city center—give the classic cocktail a subtle spin, using fresh grapefruit in place of grapefruit soda, and boosting the drink’s depth with a touch of Campari.

Ingredients

  • 2 oz. blanco tequila
  • 2 oz. fresh grapefruit juice
  • 1 oz. fresh lime juice
  • 1/2 oz. agave nectar
  • 1/4 oz. Campari
  • 1 oz. chilled club soda
  • Tools:barspoon
  • Glass:highball
  • Garnish:salt rim, grapefruit slice

Preparation

Rub the cut edge of a lime wedge around the rim of a glass and dip the rim in coarse salt, then shake to remove the excess. Add ice to the glass along with all of the ingredients and gently stir to combine, then garnish.
