The idea for the Golden Ghost came from the classic Bijou cocktail, says Brian Evans of Sunday in Brooklyn. “With this drink, I wanted to pair flavors of bitterness, chocolate and smokiness. I’ve found that what might seem almost like opposites, all pleasantly attract.”
¾ oz. mezcal espadín
¾ oz. blanco tequila
¾ oz. white crème de cacao
¾ oz. Dolin Génépy
1 dash orange bitters
Tools: mixing glass, barspoon
Glass: Nick and Nora
Garnish: star anise
Stir all the ingredients together with ice in mixing glass. Strain into a chilled glass, then garnish. Note: At the bar, Evans soak 1 star anise in overproof vodka, then lights it aflame over the drink before garnishing.
