Solero: A Passion Fruit Cocktail

When Ross Simon, owner of Phoenix’s Bitter & Twisted Cocktail Parlour, bartended at iconic London bar LAB in 2003, he created this creamy passion fruit cocktail inspired by his favorite childhood treat: the Solero ice cream bar made with vanilla ice cream and passion fruit sorbet. “Transforming that delicious, light, zesty, and flavorful treat into a cocktail seemed like a natural choice,” he explains. The cocktail has gone on to become the longtime favorite of bar-goers since Bitter & Twisted opened in 2014.

Ingredients

  • 1 1/2 oz. vodka
  • 1 1/2 oz. passion fruit puree
  • 1 oz. half and half
  • 1/2 oz. vanilla liqueur
  • 1/2 oz. passion fruit syrup
  • 1/4 oz. passion fruit liqueur
  • Tools:barspoon
  • Glass:sling
  • Garnish:mint sprig

Preparation

Add the ingredients, except the passion fruit liqueur, to the glass filled with crushed ice. Stir and add more crushed ice and top with the float of passion fruit liqueur.
