Strawberry and tarragon are one of the dynamic duos of summer. Add shaved ice to the equation and consider that summer heat beat.

Ingredients

  • 1 pint fresh strawberries, washed and caps cut off
  • 1/2 cup fresh lemon juice
  • 1 1/2 cups water
  • 1 cup granulated sugar
  • 1 small sprig fresh tarragon
  • Shaved ice
  • Tools:saucepan, fine mesh strainer
  • Glass:small cups or dishes

Preparation

Combine the strawberries, lemon juice and water in a saucepan. Bring to a boil. Reduce heat to medium and simmer for 15 minutes. Let the mixture cool and strain through a fine mesh strainer. Add sugar to the strained liquid and mix until dissolved. Finely mince tarragon and add to the syrup. Overfill small cups or dishes with shaved ice and drizzle generously with the syrup. Serves 8.
