Paint the Town: A Tropical Carrot Cocktail

Transition from chilly weather to warm, sunny days with this tropical carrot cocktail from Brooklyn’s Bar Louise. The candied banana and caramel notes of the rums complement the sweet savoriness of carrot juice rounded out with pineapple juice and the warmth of ginger and cinnamon.

Ingredients

  • 1 1/4 oz. dark rum (Bar Louise uses Gosling's Black Seal Rum)
  • 1 oz. fresh carrot juice
  • 1 oz. cinnamon syrup
  • 1/2 oz. fresh lime juice
  • 1/2 oz. egg white
  • 1/4 oz. navy strength rum (Bar Louise uses Smith & Cross)
  • 1/4 oz. fresh pineapple juice
  • 1/4 oz. ginger syrup
  • Tools:shaker, strainer
  • Glass:tulip or curved pilsner
  • Garnish:freshly grated cinnamon and pineapple wedge, optional: dehydrated lemon wheel

Preparation

Add all the ingredients to a shaker and dry shake (no ice) for about 30 seconds. This adds as much air to the shaker tin as possible, allowing the egg whites to foam nicely. Add ice and shake again for an additional 30 seconds. Strain into the ice-filled glass. Garnish.
