This Mai Tai riff features hoppy IPA for a “touch of complexity” and a “nice frothy head,” says bartender Jacob Grier, author of Cocktails on Tap.


  • 1  1/2 oz. IPA
  • 1 oz. aged rum
  • 1 oz. light rum
  • 1 oz. fresh lime juice
  • 3/4 oz. orgeat
  • 1/2 oz. orange curaçao
  • Tools:shaker, strainer
  • Glass:Collins
  • Garnish:Luxardo cherries


Shake all ingredients with ice and strain into an ice-filled rocks or Collins glass. Garnish with the cherries.
