Humble Pie, A Holiday Cocktail

A seasonal cocktail inspired by the flavors of apple pie.

“This cocktail commemorates a light-hearted disagreement between family members regarding the most delicious combination of spices to use in apple pie filling,” says Portland, Oregon bartender Sean Hoard. “Needless to say, someone had to eat a slice of humble pie.”


  • 1 oz. apple brandy (Hoard uses 100-proof Laird’s Straight Apple Brandy)
  • 1 oz. blended scotch
  • ¼ oz. ginger syrup (1:1)
  • 1 tsp. demerara syrup (2:1)
  • 4 dashes St. Elizabeth Allspice Dram
  • 1 dash Angostura Bitters
  • 2 grinds black pepper
  • Tools:barspoon, strainer
  • Glass:rocks
  • Garnish:candied ginger


Add all ingredients to a mixing glass with ice and stir until chilled. Strain into a rocks glass over fresh ice and garnish.
