La Dominicana Cocktail

A simple and delicious pick-me-up

In this Sasha Petraske original, a simple but elegant mix of rum and coffee liqueur makes for a delicious pick-me-up. Petraske protege Michael Madrusan serves the drink at The Everleigh in Melbourne; the original Dominican rum is swapped out in favor of Flor De Caña 5-Year.

Ingredients

  • 1 1/2 oz. aged rum
  • 1 1/2 oz. coffee liqueur
  • Cream mix, to float
  • Tools:shaker, strainer
  • Glass:coupe

Preparation

Combine the coffee liqueur and aged rum in a shaker with ice. Shake until chilled, strain into a coupe, and float the cream over the top.

Coffee Liqueur: As an alternative to store-bought coffee liqueur, the team at Everleigh uses a 1:1 combination of Carter’s Original coffee liqueur and Galliano Ristoretto, infused overnight with 20 grams of coffee beans per liter.

Cream Mix: Shake 5 parts heavy cream with 1 part milk with 2 sugar cubes.
