Drink of the Week: Henri Champliau Crémant de Bourgogne Brut Authentique NV

As the Thanksgiving holiday nears, I’ve been putting a lot of thought into how drinks are going to factor into the occasion. Sadly, I won’t be orchestrating the usual flourishes of a big family gathering, but I’ve managed to reframe the day as a welcome opportunity to keep things simple, which is why I plan to go all in on bubbles. Sparkling wines are incredibly versatile—they pair well with almost every type of food, from cheese to roast turkey to dessert. Plus, they epitomize a celebratory spirit. Despite everything we’ve all lost this year, sparkling wines allow us to infuse the day with a little sparkle and to be thankful for what we do have.

Since discovering some fantastic sparkling wines in the south of France last summer, my mother and I have been scouring shelves back home for the best bottles we can find, and when I found this non-vintage bottling of Henri Champliau Crémant a few weeks ago, I knew it will be just the ticket for bringing a little sunshine to the Thanksgiving holiday. From the Côte Chalonnaise region of Burgundy, the sparkling wine estate was named after Alexandre Graffard’s grandfather when it opened in 2016, and this particular bottling features a blend of Pinor Noir and Chardonnay grapes. It’s a searingly bright and zippy cuvee that sings with pear and lemon peel flavors layered over a sturdy structure. It’s a beautiful addition to any holiday, but especially fitting for a day of giving thanks. $29.99, wine.com
