Meet Me at the Clock: A French 75 Riff

Toast the new year with this show-stopping French 75 riff from Toronto’s Clockwork Champagne and Cocktails bar. Chilled with a frozen rosé sphere and spritzed with absinthe, it’s an intriguing take on the classic.
Ingredients
- 1 oz. gin
- 1/2 oz. fresh lemon juice
- 1/2 oz. simple syrup
- 5 dashes Peychaud's bitters
- 1 1/2 oz. sparkling wine
- Tools:shaker, strainer
- Glass:large coupe
- Garnish:frosé sphere, spritz of absinthe
Preparation
Add all of the ingredients, except the sparkling wine, to a shaker. Shake well and strain into a chilled glass. Top with the sparkling wine, add the frozen rosé sphere and a spritz of absinthe.
