Toast the new year with this show-stopping French 75 riff from Toronto’s Clockwork Champagne and Cocktails bar. Chilled with a frozen rosé sphere and spritzed with absinthe, it’s an intriguing take on the classic.
Add all of the ingredients, except the sparkling wine, to a shaker. Shake well and strain into a chilled glass. Top with the sparkling wine, add the frozen rosé sphere and a spritz of absinthe.
