Forgotten Borough: A Genever Sour

This Genever Sour by Madame George Beverage Director Marshall Minaya was inspired by and named after “The Forgotten Borough” of Staten Island, where the Dutch set up their first distillery when settling in nearby New Amsterdam (before it was New York City) in the 17th century. Minaya takes malt genever in a savory direction with a hit of mezcal and egg white foam finished with toasted sesame oil.

Ingredients

  • 1 oz. genever
  • 1/2 oz. mezcal
  • 1 oz. acid-adjusted pineapple juice (2:1 lime to pineapple)
  • 1/2 oz. Angostura Bitters
  • 1/2 oz. demerara syrup
  • 1 fresh egg white (pasteurized if you like)
  • Tools:shaker, strainer, fine strainer, eyedropper, bamboo skewer
  • Glass:coupe
  • Garnish:3 drops Peychaud's and 3 drops toasted sesame oil

Preparation

Add all of the ingredients to a shaker, starting with the egg white. Dry shake, add ice, and shake vigorously. Fine strain into a chilled coupe. Use an eyedropper to place alternating drops of Peychaud’s bitters and toasted sesame oil on top of the foam, then draw a bamboo skewer through drops to create petals.
