Kona Coasting: A Tropical Bourbon Cocktail

Jeff “Beachbum” Berry steps up to the challenge of making whiskey work in a tiki cocktail.

At Tiki Social, a cocktail experience created by Jeff “Beachbum” Berry for 13 of Omni Hotels & Resorts’ locations across the country, those seeking summer vacation vibes can sip several new tropical cocktails. But Berry says the Kona Coasting cocktail is his favorite because it forced him to face the challenge of making whiskey work in a tiki cocktail. Instead of lime juice, which is traditionally used in tropical drinks but doesn’t play well with bourbon, Berry swapped in lemon juice. Banana and coffee liqueurs complement the bourbon notes while pineapple juice “not only harmonizes with all the other ingredients but brings the tropical touch that every tiki drink needs,” he says.

Ingredients

  • 1 1/2 oz. bourbon
  • 1 1/2 oz. unsweetened pineapple juice
  • 3/4 oz. fresh lemon juice
  • 1/2 oz. crème de banane
  • 1/2 oz. coffee liqueur
  • 1/2 oz. simple syrup (1:1)
  • Tools:shaker, strainer
  • Glass:rocks
  • Garnish:pineapple fronds, pineapple wedge

Preparation

Add all of the ingredients to a shaker with ice. Shake and strain into a glass over ice cubes. Garnish.
