Since summers in the South tend to be quite sultry, Dan Williams of The Darling Oyster Bar in Charleston and Savannah, wanted to create a refreshing tropical rum cocktail that's "easy to drink but still has the complexity and strength you expect from a great rum cocktail." He turned to the Royal Hawaiian Mai Tai for inspiration. The white rum and spiced rum blend is sweetened with fresh pineapple and orange juices and orgeat. For contrast and complexity, a float of dark rum is layered on the finished cocktail.
