Toby Maloney calls this Violet Hour classic “a gin cocktail for people who think they don’t like gin cocktails.” It’s been a best-seller at the bar since it first opened in 2007.
2 oz. London Dry gin
¾ oz. fresh lime juice
¾ oz. simple syrup (1:1)
4 drops rose water
3 drops Angostura bitters
3 slices cucumber
1 mint sprig
Tiny pinch of salt
Tools: muddler, shaker, strainer
Garnish: mint sprig
Muddle the cucumber and pinch of salt. Add the mint, lime, syrup and 3 drops of rose water. Shake vigorously. Strain into a chilled coupe, then garnish with a mint leaf. Put 1 more drop of rose water on the mint leaf and place 3 drops of Angostura bitters around the leaf.
