Adapted from Harry’s ABC of Mixing Cocktails, the original Parisian cocktail put vermouth at the forefront, but Aaron Melendrez lets gin take the lead in this variation served at Verlaine in Los Angeles. Melendrez calls it, “so well balanced even Harry would approve.”
2½ oz. Plymouth gin
¾ oz. dry vermouth
½ oz. crème de cassis
4 dashes lavender bitters
Glass: Nick and Nora
Combine all the ingredients in a mixing glass with ice and stir until chilled. Strain into a chilled glass. Express the oils from a lemon peel over the glass and discard.
