This fruit-forward take on the classic Pimm’s Cup has just the right amount of citrusy pucker to complement the fresh bouquet of botanicals.
1½ oz. Pimm’s No. 1
1 oz. London Dry gin
½ oz. fresh blood orange juice
¾ oz. fresh watermelon juice
¼ oz. fresh lime juice
¼ oz. thyme syrup
Tools: shaker, strainer
Garnish: dehydrated blood orange round, thyme sprig
Add all the ingredients to an ice-filled shaker and shake to combine, then strain into the glass and garnish.
Thyme syrup: In a small saucepan, bring 1 cup water to boil over medium heat. Once boiling, add 1 cup of sugar and a small bundle of thyme, stir well. Remove the saucepan from the heat and let steep for 10 minutes. Once cool, strain the syrup into a jar and keep refrigerated for 1 week.
