L’Escolar Gin & Tonic Riff

This riff on the Gin & Tonic—a Barcelona staple—leaves out the bubbles and adds Byrhh quinquina and bitters. Bobby Gin uses Modernessia Gin, a Spanish brand that Pizarro helped develop.

1¾ oz. gin
¾ oz. tonic syrup (Bobby Gin uses Bon Vivant)
¾ oz. Byrrh Grand Quinquina
2 drops orange bitters
Tools: barspoon, strainer
Glass: coupe
Garnish: orange twist

Stir all the ingredients with ice to chill, then strain into a chilled glass. Garnish.
