Named for Latitude 29 regular (and Imbibe contributing editor) Wayne Curtis, this cocktail from the bar’s opening menu was recently reformulated using overproof rum. “It gives the drink the ‘oomph’ I always thought it needed,” says bar owner Jeff “Beachbum” Berry.
1¼ oz. Demerara rum (Berry uses El Dorado 8-year-old)
1 oz. chai syrup
1 oz. fresh lime juice
¾ oz. Plantation O.F.T.D. Overproof rum
Tools: shaker, strainer
Garnish: lime wedge pierced with pirate flag
Shake all ingredients with ice, then strain into chilled glass and garnish.
Chai Syrup: In a saucepan, combine 32 oz. (1 carton) of liquid chai concentrate (Berry uses Oregon Chai Original) with 20 oz. of gold turbinado or demerara sugar. Bring to a boil, stirring regularly, then reduce the heat and simmer uncovered for 2 minutes. Remove from the heat, let cool, and bottle. Keep refrigerated for up to 2 weeks.
