A Southern riff on Jerry Thomas’ Morning Glory Fizz.

First published in the 1887 update of Jerry Thomas’ Bartender’s Guide, the Saratoga Brace Up is a riff on the Morning Glory Fizz, swapping the scotch for cognac, dialing down the absinthe and adding a whole egg for an extra decadent cocktail. At Julep in Houston, owner Alba Huerta files the drink under Southern Classics.

Ingredients

  • Tools:shaker, strainer, fine strainer
  • Glass:flute
  • Garnish:star anise

Preparation

Pour the cognac, absinthe, lemon juice, syrup and egg into a cocktail shaker. Dry shake vigorously 20 times. Fill the shaker with ice cubes. Close the shaker and shake vigorously 100 times. Fine-strain into the glass. Garnish with the star anise.
