Creamy and sweet, the classic Pink Squirrel is great for sipping after dinner, and perfect for fans of the Grasshopper. “The Pink Squirrel was originally created at Bryant’s Cocktail Lounge in Milwaukee in the 1940s,” says The Betty beverage manager Trey Ledbetter. “This almond flavored cocktail drinks like a milkshake in all the best ways. Our variation utilizes chocolate and almond flavors with a touch of cognac to provide balance to a delicious dessert cocktail.”


  • 1/2 oz. Cognac
  • 3/4 oz. crème de cacao (Ledbetter uses Tempus Fugit)
  • 1/2 oz. crème de noyaux (Ledbetter uses Tempus Fugit)
  • 1 oz. heavy cream
  • Tools:shaker, strainer, fine strainer
  • Glass:coupe
  • Garnish:grated nutmeg


Combine all ingredients in a shaker and dry shake. Add ice and shake until chilled. Fine strain into a glass and garnish.
