Mount Fuji apple cocktail

A refreshing sour variation where the apple is the main attraction.

Christopher Reyes, partner of Brooklyn’s Mexican restaurant Aldama, always wanted to make a cocktail that spotlighted the apple, especially a fresh one. “I’m a huge fan of using fresh fruit, and most of the time cocktails only have half an ounce or an ounce,” he says. “But the Mount Fuji has 3 ounces of fresh apple juice.”

While Aldama cold presses Fuji apples for the cocktail, Reyes says storebought juice is fine, too. He recommends Red Jacket. “It’s the closest thing to fresh apple juice with no additives,” he says.

Ingredients

  • 1 1/2 oz. Reposado Tequila (Reyes uses Cazadores)
  • 1/2 oz. Pear Liqueur
  • 1/2 oz. Lemon Juice
  • 3 oz. Fuji Apple Juice
  • 1 tsp. cane syrup
  • Tools:shaker, strainer
  • Glass:Collins
  • Garnish:Fuji apple slices

Preparation

Add all ingredients to a cocktail shaker, shake with ice, and strain into a Collins glass over fresh ice.
