A Middle Eastern–inspired cocktail by way of Washington, D.C.

Inspired by the classic Middle Eastern hookah tobacco flavor of the same name, this cocktail from Washington, D.C. bartender and 2021 Imbibe 75 Person to Watch Chris Hassaan Francke uses Calvados, reduced cider, and Palestinian arak to capture the sweet, tart flavor of apples, accented by aniseed. “The end result tastes just like the Middle East’s favorite smoke,” says Francke.

Ingredients

  • 1½ oz. Calvados
  • ½ oz. reduced cider syrup (The Green Zone uses Wood’s Boiled Cider, but you can make your own by reducing 1 quart of fresh-pressed apple cider down to ½ cup)
  • ½ oz. arak (The Green Zone uses Arak Ramallah Golden Arak)
  • Tools:barspoon
  • Glass:double Old Fashioned
  • Garnish:apple slices

Preparation

Add all of the ingredients to the glass, add a large ice cube, and stir until well-chilled, then garnish.
