Designed to highlight the floral, herbaceous character of a contemporary gin, this cocktail accents these flavors with pineapple, coffee and Chartreuse.
1½ oz. gin (Barber Shop uses Aviation)
1 oz. pineapple juice
½ oz. fresh lemon juice
½ oz. yellow Chartreuse
2 tsp. simple syrup (1:1)
10 coffee beans
Tools: shaker, strainer, fine strainer
Garnish: dried pineapple wheel, 3 coffee beans
Shake all the ingredients with ice to chill, then double strain into a chilled glass and garnish.
