This simple twist on the Gold Rush hits all the right notes, swapping bourbon for Irish whiskey and adding a bouquet of mint. No fresh mint on hand? Bartender Ash Miyasaki says, “Got some mint tea on hand? Try a couple dips of it in the cocktail. You’re just looking for that slight hint of mint here.”
2 oz. Irish whiskey
¾ oz. fresh lemon juice
¾ oz. honey syrup (2:1)
Tools: shaker, strainer
Garnish: mint bouquet
Combine all of the ingredients in a shaker with ice and shake to chill. Strain into a rocks glass over ice and garnish.
