Drink of the Week: Trois Rivières Cuvée Du Moulin Rhum

Though still a minority in the spirits category, rhum agricole is increasingly making its way into American markets. Often hailing from the French West Indies, the spirit is made from fermented sugarcane juice, rather than molasses, giving the rhum its earthy, herbaceous qualities. The Cuvée Du Moulin is a new import from Martinique distillery Trois Rivières.

It’s a blend of rhums aged for three years in former bourbon casks, giving the spirit a rich caramel color and a spicy aroma. Complex enough to enjoy on its own with flavors of fruit and spice, the rhum would also do well in a cocktail that lets the spirit shine, such as The Trembler. $55.99, www.grandwinecellar.com
