At the new Amor y Amargo location in Brooklyn, riffs on classic cocktails like the Old Fashioned, Manhattan and Negroni anchor the drinks program. This spin on the Negroni softens the cocktail’s red bitter component by using Aperol instead of Campari and amps up the dark bitter flavors with Amaro Montenegro.
1½ oz. London Dry gin
¾ oz. Amaro Montenegro
¾ oz. Aperol
2 dashes Dale DeGroff’s Pimento bitters
Tools: mixing glass, barspoon, strainer
Garnish: orange twist
Stir all of the ingredients together in a mixing glass with ice to chill, then strain into a rocks glass over fresh ice. Garnish.
