“Personally, I always love a good Franciacorta when Champagne isn’t available. It’s Italy’s answer to Champagne—it’s made in the traditional method, like Champagne, and typically it’s also made from Chardonnay or Pinot Noir. One of my absolute favorites is the ‘Saten Blanc de Blancs’ from Ronco Calino. “This Toques et Clochers Crémant de Limoux is a distinctive blend. Chardonnay and Chenin Blanc make it crisp and acid-driven.
