Redlight Dayvan Cowboy: a sage bourbon sour

An herbaceous whiskey sour that serves up perfect refreshment for warm days.

For this whiskey sour riff, bartender Lani Suyama of Redlight Kitchen & Bar in Bellingham, Washington, was inspired by the flavors of lemon meringue and the aroma of desert sage. Combining a sage-infused bourbon with tangy lemon curd and herbaceous Bénédictine makes for easy-drinking refreshment that’s perfect for warm days.

Ingredients

  • 2 oz. sage-infused bourbon
  • 1 oz. fresh lemon juice
  • 1 oz. fresh egg white (pasteurized if you like)
  • 1/2 oz. Bénédictine
  • 1/2 oz. demerara syrup
  • 1 barspoon lemon curd
  • Tools:shaker, strainer, fine-mesh strainer
  • Glass:rocks
  • Garnish:2 fresh sage leaves, dried lemon wheel

Preparation

Shake all of the ingredients with ice, then double strain into a rocks glass over a large cube. Garnish.
Sage-Infused BourbonAdd 1 1/2 tsp. chopped fresh sage to 750ml bourbon and allow to infuse for 2 days, then strain and bottle.
