The bartenders at Whisler’s in Austin wanted to pursue a spirited path that was somewhat less traveled with this year’s Negroni Week cocktail. “Pisco is a spirit that is versatile enough yet sometimes under utilized in cocktails,” Matthew Ross says. “The name My Fair Lady came from the color of the cocktail, which reminded Aisling of the famous pink dress from the movie.” $1 from each drink sold will benefit St. Jude Cancer Research and Children’s Hospital.
1.5 oz. pisco (Pisco Porton is recommended)
.75 oz. Campari
.75 oz. Cocchi Americano
2 dashes Bittermens Hopped Grapefruit bitters
Stir ingredients together in a mixing glass with ice. Strain over a large cube in an old fashioned glass with a grapefruit peel garnish.
